  Carrot Apple Scones

Grease 9 inch springform pan. Set aside.

Peel, core and thinly slice apples. Sprinkle with lemon juice and set aside.

Cream margarine, lemon peel and sugar. Add eggs, one at a time and beat thoroughly after each one.

Add the gluten free white flour, xanthan gum, baking powder, bicarbonate of soda, salt and cinnamon. Beat thoroughly.

Spoon half the mixture into the prepared cake pan.

Arrange apple slices on top. Scatter nuts and raisins on top of apples.

Spread the remaining mixture over the raisins and nuts.

Bake for 40-45 minutes, or until test with a knife into cake and it comes out clean.

Cool in pan for 15 mins, then remove sides.

Dust with icing sugar before serving.

2 Cox’s Pippin or Granny Smith Apples
1 tsp xanthan gum
1 tbsp fresh lemon juice
1 tsp baking powder
¾ cup dairy free margarine
½ tsp bicarbonate of soda
1 tbsp grated lemon rind
1/2 tsp of salt
1 cup brown sugar
1/3 cup raisins
3 large eggs
¼ cup chopped walnuts
2 tbsp icing sugar



Pre-heat oven to GM4, 350F, 180C
