Mix together the gluten free plain white flour, xanthan gum, baking powder and sugar (if using).

Add egg and mix well.

Slowly add the milk mixing all the time.

Using a tablespoon, drop the batter into an oiled and hot griddle or frying pan.

Cook until bubbles appear on the top and underneath is light brown, then flip over and cook until both sides are light brown.
