Mix together the flours, salt and xanthan gum.

In separate bowl whisk together the eggs and oil.

Mix the egg mixture into the flour mix, to form a dough.

Mould the dough into a ball and knead for a few minutes.

On floured surface, roll out the dough very lightly, until it is transparent.

Slice into very thin strips for spaghetti, slightly wider for noodles or into rectangles for lasagne.

If using a pasta machine, roll dough out a little before placing in the machine. The follow instructions.

Add the pasta to boiling salted and oiled water (1 tbsp olive oil) cook for approx. 10-12 mins, according to thickness of pasta.
Drain and rinse well
