Method

Mix together the gluten free bread flour, xanthan gum, sugar and salt in separate bowl mix together the eggs, light olive oil, vinegar, diary free milk and tepid water.

Place the liquid mix at the bottom of the bread pan.

Gentle spoon the flour mix on top of the liquid.

Sprinkle the yeast over the top of the flour mix.

Use the normal baking setting for the machine and choose either light or dark crust setting. (Do not use the delayed programmed setting).

It may be necessary to help turn the ingredients over with a spatula at the start of the programme.

When the machine has finished baking, remove the bread and place on its side to cool. Wait until bread has cooled before slicing.

Variations

Many other ingredients can be added to this bread : dried herbs, spices, mashed banana, apricots almonds, sliced capsicums, onion, sesame seeds etc.

Ingredients

3 cups gluten free white bread flour**
½ cup glutinous rice flour
½ tsp xanthan gum
2 tb sp sugar
½ tsp salt
1 sachet (2 ½ tsp) fast action dried yeast
2 large eggs
¼ cup light olive oil
1 tsp cider vinegar
1 ¾ cups of tepid water or soya or rice milk

**Alternative mix:
2 cups rice flour
½ cup glutinous rice flour
½ cup potato flour
½ cup tapioca flour

(If you can not get glutinous rice flour just add ½ cup more potato flour and ½ tsp xanthan gum.)
